Italian sausage, red wine & tomato ...

... skin & mash the snags (about 3), pop in a saucepan and brown off, add about a cup of red wine and cook off the alcohol. Add a tin of mashed up Italian tomatoes, cook down at low heat for about 20-30 minutes, you're aiming for a thickish, glossy sauce. At the very end whack in a handful or so of chopped parsley. Bung over (pre-cooked obviously) pasta.
Side-sticking bliss.
Serves 2 or 3, depends on how greedy you are or how cold it is outside.
Bonus - you get to finish off the bottle of red!
