… was going to be mushroom & prosciutto but Mr Brown was out so I made H&B’s mushroom cappuccino instead. Well, I tweaked, cut back on the cream, added some thyme & parsley and a slosh of brandy, didn't bother to sieve and whizzed instead (which frothed a bit but hardly cappuccino like). So really, it was mushroom soup.
Served 1 (I needed the liquid, having given blood that morning. Attempted to over donate too, bit of drama and clean up in isle 3 for the day), with toasted olive bread and Persian feta.

... well ... according to the recipe I made enough for 4 to 6, but I was terribly dehydrated you see!

Cookie, I didn't just leak - I spurted most impressively - was terribly dramatic. Soup was lovely.
It's the cream you cut back on that adds the froth :)
You mean to tell me you had truffle oil on hand ? I should have admitted i've never added that ( but I would like to ! )
H&B - i cut back on the cream for fear Mr Brown would come home and find me keeled over from a heart attack!
I did indeed have truffle oil on hand - doesn't everyone?? (I use it mostly to boost up the mushroom-y-ness of pasta sauces and stews - not very posh but most delish).
There is a really good mushroom relish I use in soups etc., and once I get home and raid my cupboard, I'll let you know what it is!
Aas for the blood thing, predictablly, they won't take mine..hmmm
Never mind Roo, they take plenty of mine - I've practically got track marks :)
