... Fruit.
Yesterday afternoon while doing a bit of a garden tidy we found, hiding amongst the vinery, 4 lovely ripe passion fruit. Rather than slashing them open with the secateurs and gobbling them on the spot I snatched them from Mr Brown and ran and hid them in the kitchen. I had a plan. A passion fruit pudding plan.
I used Mr Granger's recipe. It's so simple I thought I'd share.
You'll need 20g (3/4 oz) unsalted butter (soft, not straight from the fridge)
125G (1/2 cup) sugar
40g (1/3 cup) plain flour, sifted
65g (1/4 cup or about 4) passion fruit
2 eggs, separated
Whip the whites still quite stiff & put aside. Preheat the oven to 180C (350F).
Beat the butter and sugar together, it'll look like greasy sand.
Add the flour, passion fruit, mild & the egg yolks and combine to a slurry. Now fold in 1/2 the egg whites, then fold in the other half.
By this stage it looks like something a baby has hurled up, runny, chunky, revolting. You'll be thinking to yourself, "I've fucked up here, somewhere". But be brave, all is well.
Pour the goop evenly into 4 greased (with butter) 1 cup ramekins and pop in the oven for about 15 minutes.
Take them out, poke a hole in the middle and pour in a little more passion fruit pulp (if you have it) or whack on a dollop of King Island Creme (for you poor yanks, sorry, you'll have to make do with plain old whipped cream).

I wish we had the weather to be able to grow passion fruits!
