Friends over for dinner tonight, and since one of them is celebrating her birthday, I made a birthday cake. A celebration in green (it's a zucchini, lime & pistachio cake but I never tell until AFTER it's eaten).
Always a fraught moment, will it come out in one piece?

That looks divine, and zucchini in a cake always appeals to me - nice n moist .. mmmm
Exactly, it really does help keep the cake moist (so does the almond meal). And not a single person guessed what sort of cake it was, even when offered the rest of the cake to take home as a prize!
