Ricotta is made of milk, a little lemon juice or vinegar and a touch of salt.
On Thursday, filled with a need to make a weed pie, I stopped at ghastlyColes for some ricotta. I bought this variety, because it said "traditional" on the lid and because the packet was cute.
I did not read the ingredients label, I should have. I should have because I'm in the middle of Michael Pollan's In Defence of Food.
I did when I got home, let me just say (because I've thrown the packet away and so I can't actually tell you) the ingredient list was a shit-load longer than Milk, Salt, Acid.
Let me just say I won't be buying that brand of ricotta again.

I bought a pint of sour cream once and had a an equally shocking moment when I opened the container and it just didn't "feel" right.
Read the ingredient list and wondered how that much stuff was crammed into one small package.

Or (and, I know, I'm talking through my hat, having never done it myself) -- make your own ricotta.
Way to ruin ricotta! It's like yogurt here. If you don't read the package, you will get yogurt with an ingredient list a mile long. Seriously, it should just say milk and bacillowhatsit, period. Or how about ice cream? Cheap ice cream will have wheat flour in it. What??

E, cheap icecream has antifreeze in it! Don't eat cheap icecream!!!
I often make my own icecream, list = cream, egg yolks, sugar & a flavour like a vanilla pod or some coffee beans. THAT IS ALL!
Antifreeze???? In ice cream? That seems completely insane. Completely.

Doesn't that just fry your hide, when you forget just for a moment to look at the ingredients and get snookered like that? Grrr! Happens to me from time to time, too, and I always kick myself after.
