... last night, to go with the handlebar pork chops, I V-sliced into little batons some spuds, a fennel bulb and a granny smith. Into this I tossed a little garlic, some sage, salt and pepper. Then the dollop of sour cream left in the tub, a grate or 2 of Parmesan cheese and into the oven until it went brown on top.
I also put the chops, frying pan and all, into the oven, after browning on both sides.
At the very end of the cooking process, while piling everything onto a couple of plates, I added some steamed green beans.
Total attention paid, perhaps 15 minutes, there was a movie on the box I not seen before you see.

You've hit the nail on the head with the idea of "attention time" - that's the essence of relaxed cooking, isn't it? It can cook all day, as long as one need not tend it. This sounds delish to me. Was the movie any good?
Zoomie, I can't remember the movie, so I suspect not. Still, the long slow cook is a good one. Slow-roasted lamb shanks is a favourite.
