. 5 or so largish leaves of s...Silverbeet fritata:<br /><br />. 5 or so largish leaves of silverbeet - stems & leaves separated and chopped<br />. 2 Tsp baby salted capers<br />. 100-150g goats cheese (or feta)<br />. 6 eggs<br />. 2-3 cloves garlic - crushed<br />. 1-2 Tbl olive oil<br />. salt / pepper<br />. red onion - very thinly sliced<br /><br />-----------------------<br /><br />. in a large fry pan (oven safe) frypan)... heat to med heat<br /><br />. add olive oil - - once oil is hot<br /><br />. fry garlic / & chopped silverbeat stems - do not colour garlic<br /><br />. add in red onion slices ... fry off for a few minutes - until starting to soften<br /><br />. add in silverbeet leaves - & maybe a tiny bit of water to help with steaming of leaves.<br /><br />. stir / mix constantly .. should maybe take 2-6 minutes - until leaves are just wilted (but not a soggy mush)<br /><br />. now sprinkle baby capers over the top<br /><br />. in a bowl - whisk the 6 eggs together & season with some salt & freshly cracked black pepper<br />. pre-heat the oven grill to medium - hot heat<br /><br />. with the heat of the frypan / saucepan still on approx medium - pour in the beaten egg mixture<br />. do not stir - you should be able to see the silverbeet mix through it <br /><br />. leave on stove top for approx 10-15 minutes - keeping an eye on it .. until the eggs are set (but not overly cooked) through to the top <br /><br />. once egg mix is mostly set - sprikle over crumbled goats cheese (or feta)<br /><br />. now - put frypan under hot griller - for approx 2-5 minutes<br />(keep an eye on it) - until cheese is golden<br /><br />. Take out of oven - and leave to cool slightly - eat fritata 'warm' or 'cold' .. not overly hot.<br /><br />will keep in fridge for approx 1-2 days.bechttps://www.blogger.com/profile/01430472501564809086noreply@blogger.com
